Squeeze a few drops of lemon juice on your sliced fruits, such as apples, avocados, bananas, peaches and pears. This will keep them from turning brown.

Apricot Preserves

1 1/2 packages Einsiedehilfe preserving aid
3 tablespoons Water hot
10 pounds Apricots pitted, very ripe
7 pounds Sugar
1/4 cup Lemon Juice

Dissolve the preserving aid in hot water. Set aside.

In a large stock pot, on medium-high heat; cook apricots and sugar to setting point, continually skimming off the foam.

Checking the setting point:
Spoon a little of the preserve onto a chilled saucer. Leave for a few minutes. Hold the saucer upside down. If the preserve doesn't run, then the setting point has been reached.

Add the lemon juice. Remove from heat. Stir in the dissolved Einsiedehilfe.

Pour into hot, dry, sterilized jars. Seal jars.

This recipe makes 12 half-liter jars and 13 to 14 pint jars.
