- Grease and lightly flour a ring mold or 9 x 9 inch baking dish. Set aside.
1. Mix together the margarine and 1/4 cup of sugar in a large bowl.
2. Add the egg and beat well.
3. Measure the molasses and stir it into the mixture.
4. Using the same molasses cup; measure the boiling water and add it to the mixture, stirring well.
5. In a small bowl add the all-purpose flour, ginger, cinnamon, ground cloves, salt, baking powder and baking soda.
6. Mix together.
7. Mix the dry ingredients into the molasses mixture and blend thoroughly.
8. Pour into the prepared ring mold or baking dish.
9. Bake in the preheated 350°F oven for 40 to 45 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
10. If you are using a ring mold, let the cake cool for about 5 minutes, then unmold onto a plate.
11. To make the whipped cream: Put the chilled cream in a small chilled bowl, add the remaining 1/4 cup of sugar and lemon extract.
12. Beat with an electric mixer until stiff.
13. To serve put a dollop of whipped cream over each slice of warm Berena.
