Macaroni With Feta Cheese

1 pound Macaroni
1/2 cup Butter » melted
3 large Eggs » lightly beaten
1/2 cup Feta cheese » crumbled
1/2 cup Parmesan Cheese » grated
1/2 teaspoon Salt
1/4 teaspoon White Pepper
1/2 teaspoon Ground Nutmeg
12 sheets Filo dough

Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

- Cook the macaroni according the the package instructions.
- Lightly grease a 9 x 12 x 3 inch casserole dish.
- Cut the Filo dough to fit the dish.
- Cover the Filo dough with a damp tea towel to avoid it drying out.

1. In a large bowl, combine the cooked macaroni, 3 tablespoons of the melted butter, beaten eggs, crumbled Feta cheese and grated Parmesan cheese.

2. Season with salt, white pepper, and nutmeg.

3. Mix well to incorporate all of the ingredients.

4. Place 6 sheets of the Filo dough in the buttered casserole baking dish.

5. Generously brush with 3 tablespoons of butter.

6. Spread the macaroni cheese mixture over the Filo dough and cover with the 6 remaining sheets of filo.

7. Brush butter between each layer of the filo and on the surface with the remaining 3 tablespoons of butter.

8. Using the tip of a sharp knife, score through the Filo to indicate 12 servings. This will also allow steam to release while baking.

9. Bake in a preheated 350°F oven for 30 minutes, or until the surface is nicely browned and crisp.

10. Remove to a cooling rack for 10 minutes.

11. Cut and serve on a warm platter.

Tested and True

A good rule of thumb for freezing spaghetti is to slightly undercook it before freezing. This helps maintain a better texture when reheated. Making sure each noodle is well-coated with olive oil or spaghetti sauce can also prevent clumping and freezer burn.
