- Coarsely grind the Peanuts. Set aside.
1. Cook spinach in enough water to cover.
2. After 5 minutes, sprinkle in the peanuts, stir well.
3. Continue cooking, uncovered, over medium heat for about 30 minutes, adding more water if necessary to prevent burning.
4. Just before serving, drain and mix in the oil, salt and pepper to taste.
