Ingredients are for 6 Servings

Ingredients:
Qty Unit Ingredient
8 ounces Flour
3 ounces Butter
2 ounces Caster sugar
1 large Egg
2 ounces Currants
1/2 teaspoon Bicarbonate Of Soda
2 tablespoons Milk
Prep Time Process Time Overall Time
20 Minutes 10 Minutes 30 minutes
Directions:

1. Sift the flour, salt and bicarbonate of soda.

2. Rub the butter into the flour mixture with your fingers.

3. Add the caster sugar and currants and mix to coat the currants.

4. Beat the egg and add it to the flour and currant mixture.

5. Add enough milk to make a soft dough.

6. Turn on to a floured board and roll out to a thickness of 1/2 inch.

7. Cook on a hot greased griddle to golden brown.
