1. Cube: Cut the boneless pork loin carefully into uniform, bite-sized cubes on a clean cutting board.
2. Heat: Pour the vegetable oil into a large skillet and warm it over medium-high heat until it is beautifully shimmering.
3. Fry: Add the chopped onions to the hot oil and fry them for about 7 minutes until they turn a rich, golden color.
4. Brown: Toss the cubed pork into the skillet, turn up the heat, and brown the meat lightly on all sides.
5. Reduce: Lower the stovetop heat down to a gentle simmer.
6. Drain: Empty the sauerkraut into a colander, press out the excess brine to drain it thoroughly, and add it directly into the skillet with the pork and onions.
7. Simmer: Cover the skillet tightly with its lid and let the mixture simmer gently for about 45 minutes, or until the pork cubes are completely tender.
8. Stir: Uncover the pan and gently fold the sour cream completely into the hot pork and sauerkraut mixture.
9. Season: Dust the entire dish liberally with the Hungarian paprika just before taking it off the heat.
10. Serve: Spoon the hot, creamy pork and sauerkraut into bowls and serve immediately.
11. Qapla'! May your kitchen always bring honor to your home!
Keep your wooden cutting board clean and fresh, simply sprinkle coarse salt over the surface. Using a lemon half, scrub the board, letting the salt and lemon do the heavy lifting. Not only does this method clean, it also deodorizes, giving your board a fresh scent.
