Fish Bake

For this recipe, you can substitute smoked Haddock or smoked Coley fish in place of the smoked Cod.

Ingredients are for 4 Servings

Ingredients:
Qty Unit Ingredient
1 pound Smoked cod
1 ounce Butter
2 medium Leeks » thinly sliced
1 ounce Flour
1/2 pint Milk
2 tablespoons Cream
1 each Bay Leaf
1 ounce Cheddar Cheese » grated
4 parts Parsley
Prep Time Process Time Overall Time
20 Minutes 25 Minutes 45 minutes
Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

1. Generously grease a pie plate with butter.

2. Remove all bones from the Cod fish and cut in portions.

3. Place the pieces of fish in the pie dish.

4. Melt butter in a saucepan.

5. Add leeks and cook, gently, for two minutes.

6. Add in flour and cook for one minute longer.

7. Add milk and cream. Bring to the boil stirring constantly.

8. Remove from heat and pour this sauce over fish.

9. Add the bay leaf.

10. Cover and bake in a preheated 350°F for 25 minutes.

11. Remove the cover, sprinkle cheese over the fish and return to the oven to brown.

12. Garnish with chopped parsley.
