1. Clean and debeard the mussels; place in a buttered casserole dish.
2. Season with salt and pepper.
3. Arrange on the top the thinly sliced onion and slices of bacon.
4. Add the sherry.
5. Cover and bake in a preheated 350°F oven for 15 minutes to 20 minutes.
6. Remove the lid and sprinkle with grated cheese.
7. Return to the oven and allow the cheese to melt.
8. Serve this dish with your favourite crusty bread.
