Kangaroo Tail Stew

1 pounds Kangaroo Tail » cut into pieces
2 tablespoons Olive Oil
2 medium Carrots » chopped
2 stalks Celery » chopped
1 medium Onion » sliced
3 cloves Garlic » minced
2 tablespoons Tomato Paste
4 cups Beef broth
1 cup Red Wine
2 whole Bay Leaves
1 part Salt » to taste
1 part Black Pepper » to taste
1 part Parsley » chopped

Directions:

- Kangaroo tail is a lean source of protein, rich in iron, zinc, and B vitamins.
- Carrots and celery provide fiber, vitamins A and C, and potassium.
- Red wine adds depth of flavor and antioxidants.

1. Heat olive oil in a large pot over medium heat until shimmering.

2. Add kangaroo tail pieces and brown on all sides. Remove from pot and set aside.

3. In the same pot, add carrots, celery, onion, and garlic.

4. Cook until vegetables are softened, about 5 minutes.

5. Stir in tomato paste and cook for an additional 2 minutes.

6. Return kangaroo tail pieces to the pot.

7. Pour in beef broth and red wine. Add bay leaves and season with salt and pepper.

8. Bring stew to a boil, then reduce heat to low.

9. Cover and simmer for 2 to 3 hours, or until kangaroo tail is tender. Once cooked, remove bay leaves.

10. Serve hot, garnished with chopped parsley.
