1. Simmer the rattlesnake meat in water and lemon juice for one hour, then remove and separate the meat from the bones.
2. Cut the meat into bite-sized pieces and set aside.
3. In a large pan, brown the ground beef until fully cooked, then remove it from the pan and set it aside.
4. Using the same pan with the ground beef drippings, brown the pieces of rattlesnake meat until golden brown and flavorful.
5. In a large pot, combine the cooked kidney beans, undrained stewed tomatoes, diced jalapenos, chunks of red onion, minced garlic, salt, cooked ground beef, and rattlesnake meat.
6. Allow the mixture to simmer for 10 minutes to heat thoroughly and allow the flavors to meld together.
7. To serve, place broken tortilla chips in the bottom of each bowl and ladle the sizzling rattlesnake and bean stew over the top.
8. Garnish with your favorite toppings such as shredded cheese, sour cream, chopped cilantro, or sliced avocado for an extra burst of flavor.
