Chilled Tomato Basil Soup

This soup is delicious served with a Grilled Steak Sandwich or a nice loaf of Italian Bread.

Ingredients are for 4 Servings

Ingredients:
Qty Unit Ingredient
3 tablespoons Unsalted Butter
1 tablespoon Vegetable Oil
1 medium Onion » finely chopped
1 medium Leek » white part, chopped
1 medium Carrot » finely chopped
1 stalk Celery » finely chopped
2 tablespoons Basil » chopped
4 medium Tomatoes
3 tablespoons Tomato Paste
2 tablespoons All-purpose Flour
2 1/2 cups Chicken Stock
1/2 cup Light cream
1 teaspoon Salt
1 1/5 teaspoon Black Pepper
Optional Ingredients:

1/4 cup Sour Cream
Prep Time Process Time Overall Time
35 Minutes 4 Hours 4 hours 35 minutes
Directions:

- Seed and coarsely chop the tomatoes. Set aside.

1. Heat butter and oil in a 2 quart saucepan until shimmering.

2. Add onion, leek, carrot, celery, and basil.

3. Saute for about 5 minutes over low heat, stirring occasionally.

4. Add tomatoes and tomato paste; cook for about 5 minutes.

5. Add flour and mix well.

6. Add chicken stock, cover and simmer for about 20 minutes.

7. Pour into food processor fitted with a steel blade or into blender; puree.

8. Strain through a fine strainer or cheesecloth.

9. Return to pan and add light cream.

10. Bring to boil then reduce heat to simmer for about 2 minutes.

11. Season to taste with salt and pepper.

12. Chill for at least 4 hours or up to 2 days in advance of serving.

13. Garnish bowls with additional basil leaves and a dollop of sour cream.
