1. Wash, peel, core and chop the Granny Smith apples.
2. Place them in a large pot with the sugar, cinnamon and water. Simmer, stirring often.
3. Check the liquid level for the first 10 minutes and add water, if necessary, so the apples don't scorch on the bottom of the pot.
4. Add butter or margarine, and cook for an additional 20 minutes.
5. Mash the apples with a potato masher while cooking, or process in a food processor after the cooking is complete, to a consistency you enjoy.
