Basic Arepa Dough

Arepas freeze well if frozen while still warm. Freeze in layers separated by plastic wrap. To reheat, preheat oven to 350°F, wrap in foil and heat for 10 minutes.

2 cups Masa flour
1 teaspoon Salt
3 cups Water » boiling

Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

1. In a large mixing bowl, combine Masa flour and salt.

2. Add water, stir with a wooden spoon to make a soft dough.

3. Let stand for 5 minutes, then knead for 3 minutes.

4. Oil or wet hands lightly and shape dough into balls.

5. Place between 2 pieces of wax paper or plastic wrap and flatten into a circle; shape the edges to form a smooth disc.

6. Place on a cookie sheet and bake in the preheated 350°F oven for 15 minutes.

7. Tap the Arepa lightly, if it sounds hollow, it's done.

8. Split open, add butter and serve hot.

Making Arepas is like a ritual in my house, we grow up with this flavor in our mouths. I usually cook them on a griddle, but baking worked.

Nothing beats the taste of arepas made on a budare.
