1. Steam vegetables until just tender. Set aside to cool.
2. Finely chop the vegetables and mix with egg white, salt, pepper, mushrooms and bread crumbs.
3. Form the mixture into patties and place on a lightly oiled baking sheet.
4. Top with onion slices, and bake in the preheated 350°F oven, turning once, until brown and crispy on both sides.
