Court Bouillon

Court bouillon is often used for cooking fish and shellfish. Foods that are cooked in this liquid will absorb the flavors in the bouillon.

Ingredients are for 2 Quarts
Scale It
Ingredients:
Qty Unit Ingredient
2 quarts Water
1/2 cup Carrots » chopped
1/2 cup Celery » chopped
1 large Onion » chopped
1/4 cup Parsley » chopped
1 whole Bay Leaf
1 tablespoon Thyme » chopped
1 tablespoon Basil » chopped
2 cloves Garlic
10 each Black Peppercorns
1 teaspoon Salt
1/4 cup White Wine Vinegar
1/4 cup White wine
Prep Time Process Time Overall Time
15 Minutes 30 Minutes 45 minutes
Directions:

1. Place all of the ingredients in a large saucepan.

2. Bring the liquid to a boil on medium high heat, then simmer it for 30 minutes.

3. Remove from heat and let it cool.

4. Strain the liquid into a container and discard the vegetables. They have done their job.

5. Be sure to label and date your container.
