Beef Stock

Ingredients:

2 pounds Beef Bones
2 medium Carrots » halved
1 stalk Celery » coarsely chopped
1 large Onion » coarsely chopped
1 teaspoon Thyme
8 whole Peppercorns
1 whole Bay Leaf
3 ounces Tomato Paste
2 cloves Garlic
Prep Time Process Time Overall Time
1 Hour 20 Minutes 1 Hour 2 hours 20 minutes
Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

1. Bake the beef bones on a sheet tray, in a preheated 350°F oven until golden brown, about 1 hour.

2. Place bones in large stock pot.

3. Add remaining ingredients and enough water to cover.

4. Bring to a boil; boil about 5 minutes.

5. Remove from heat and strain, reserving the liquid.

6. Discard the bones and vegetables. They've served their purpose.

7. Return the stock to the pot.

8. Cook over medium heat until reduced by half, approximately 1 hour.
