Beef Fajitas

1 tablespoon Vegetable Oil
1 medium Onion » cut in strips
2 cloves Garlic » minced
1 tablespoon Chili Powder
1/4 teaspoon Salt
1/4 teaspoon Black Pepper
1 pound Ground Beef » lean
1/2 cup Salsa
1 each Red Bell Pepper » chopped
1 each Green Bell Pepper » chopped
1 each Zucchini » thinly sliced
10 inch Flour Tortillas » x4
2/3 cup Sour Cream
2 teaspoons Dijon Mustard

Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

1. Mix the sour cream with Dijon style mustard. Set aside in the refrigerator.

2. In nonstick skillet, heat oil over medium-high heat until shimmering.

3. Add onion, garlic, chili powder, salt and pepper.

4. Sauté for 5 minutes or until onion is soft and translucent.

5. Add ground beef and salsa.

6. Cook, breaking up beef with back of spoon, for about 3 minutes or until beef is no longer pink.

7. Add red and green bell peppers and zucchini; cook for 3 minutes or until tender but crisp and liquid has evaporated.

8. Meanwhile, wrap tortillas in foil.

9. Warm in a preheated 350°F oven for 30 minutes or until warmed through.

10. Divide beef mixture evenly among tortillas and roll up.

11. Serve with the sour cream mixture.
