Meringue Hearts

3 large Egg whites
1 teaspoon Vanilla Extract
1/4 teaspoon Cream Of Tartar
1/8 teaspoon Salt
1 cup Sugar
1 part Red food coloring
1 quart Vanilla Ice Cream
1 pint Strawberries » sliced

6 whole Mint Leaves

Directions:
Preheat oven to 275°F / 140°C / Gas Mark 1

- Cut a heart pattern from a 4-1/2 inch square paper.
- Line a sheet tray with parchment paper.
- Using your pattern, draw 6 hearts on the parchment paper. Set aside.

1. Beat egg whites with vanilla extract, cream of tartar and salt until frothy.

2. Add sugar, a little at a time, and continue beating until stiff peaks form and sugar is dissolved.

3. Rub a bit between your figures to feel that no sugar remains undissolved.

4. Gently fold in red food coloring to make a delicate pink color.

5. Spread meringue over the heart shapes, 1/4 inch thick.

6. Pipe a rim around the hearts, 3/4 inch high.

7. Bake in a preheated 275°F oven for 1 hour.

8. Turn off the oven and let meringues dry in oven for 1 more hour.

9. Do not open the oven door during this time.

10. Fill the cooled meringues with scoops of ice cream and top with strawberries.

11. Garnish with mint leaves for an added touch.
