Vanilla Extract

Vanilla extract is necessary in, too many to count, recipes. It tends to be a little costly, so why not make your own.

On parchment paper, or waxed paper, chop 3 or 4 vanilla pods into small pieces. Be sure not to lose any of the little black seeds, these are the vanilla beans.
Drop the pieces into a clean jar and add 1/2 cup brandy and 1/2 cup water. Cover with a tight-fitting lid and keep in a cool dark place, shaking every other day.

Your homemade vanilla extract will be ready in about 2 weeks.
As you use your Vanilla Extract, add equal parts brandy and water, until the beans are no longer potent. The mixture can be added to indefinitely. Add another vanilla pod, if needed.
Use just as you would store bought vanilla extract.

This will keep for up to one year in your cupboard. Be sure to label and date your jar.
