Broad Bean And Roast Garlic Soup

Ingredients:

2 1/2 pounds Broad Beans
3/4 cup Brown rice » long grain
1 3/4 cups Water
1 teaspoon Salt
1 pinch Saffron
20 cloves Garlic
1 1/2 tablespoons Olive Oil
4 cups Chicken Stock

Directions:
Preheat oven to 375°F / 190°C / Gas Mark 5

1. Shell and wash the Broad Beans. Set aside.

2. Place the rice in a saucepan with the water, salt and saffron.

3. Bring to a boil, then reduce the heat and simmer for 30 minutes or until all the water has been absorbed and the rice is tender.

4. Meanwhile, put the garlic cloves in a small roasting pan with the oil and roast in the preheated 375°F oven for 10 to 15 minutes or until they are soft and golden.

5. Turn them once to make sure they do not brown underneath.

6. Add the beans to the rice, pour on the stock and bring to the boil.

7. Add the garlic cloves and their oil, reduce the heat and simmer for 15 minutes.

8. Remove from heat, cool a little then puree in a food processor or blender.

9. Taste for seasoning, add salt and pepper to taste.

10. Serve hot.
