Barbecued Ostrich

Ingredients:

2 teaspoons Salt
1 teaspoon Black Pepper
2 teaspoons Dry Mustard
3 ounce Ostrich Steaks » x 6
1 clove Garlic » chopped
1/2 cup Vinegar » or lemon juice
1 teaspoon Lemon Zest » grated
2 teaspoons Sugar
1/2 cup Vegetable Oil
Prep Time Process Time Overall Time
20 Minutes 4 Hours 4 hours 20 minutes
Directions:

1. In a bowl, mix salt, pepper, and dry mustard.

2. Rub the mixture into the ostrich steaks and place them in a dish.

3. In another bowl, combine chopped garlic, vinegar (or lemon juice), grated lemon zest, sugar, and vegetable oil.

4. Pour the marinade over the ostrich steaks and let them marinate for 4 hours, turning every hour.

5. Grill the steaks on a barbecue or stove-top grill to your desired doneness, basting with the marinade while cooking.
