Muskrat In Tomato Soup

4 each Muskrat
1/2 pound Bacon » chopped
4 stalks Celery » chopped
4 medium Onions » chopped
1/2 pound Margarine
1/2 teaspoon Cayenne Pepper » ground
1 teaspoon Salt
1/2 teaspoon Black Pepper
21 ounces Tomato Soup » undiluted

30 Minutes 3 Hours 3 hours 30 minutes
Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

- 21 ounces of Tomato soup is usually 2 standard cans.
- Skin and clean the Muskrat, remove the fat, scent glands and white tissue inside each leg.

1. Saute bacon, celery, onions, margarine and cayenne pepper together for 10 minutes.

2. Place rats in the bottom of a pan that has a tight fitting lid.

3. Pour the bacon sauté mixture over the Muskrats.

4. Add the tomato soup. Don't add water or milk to the soup.

5. Cover with a tight fitting lid and bake in the preheated 350°F oven 2-1/2 to 3 hours, until the Muskrats are tender.

I gave this recipe a try because I enjoy experimenting with unique ingredients. The tomato soup and bacon mixture was tasty, but the muskrat meat was a bit too gamey for my liking.

I followed the recipe exactly, but no matter what, it was awful. The muskrat meat had a strong flavor that I couldn't get past, and overall, the dish didn't appeal to me at all. I won't be making this again.

I approached this recipe with an open mind, and I was pleasantly surprised. The muskrat meat, was tender and tasty. It's definitely a unique dish worth trying for adventurous cooks.

I attempted this recipe hoping for an exotic dish, but it was a disappointment. The combination of flavors was strange, and the muskrat meat was not enjoyable at all. I would not recommend it.
